Bread and butter panettone
Panettone (400g), thinly sliced
150g unsalted butter
150g raisins, soaked in Marsala
pinch each ground cloves & cumin
4 egg yolks
75g caster sugar
500ml double cream
1 tsp vanilla essence
Butter both sides of the panettone. Grease a large oven dish. Lie the panettone in it, overlapping. Sprinkle with the raisins and spices. Beat the yolks and caster sugar until pale yellow. Stir in the cream and vanilla. Mix well and pour on the panettone. Place in a baking tray with enough water to come two-thirds up the side of the dish. Bake in an oven preheated to 180ºC/Gas Mark 4 until set and golden, about 45 minutes. Serve warm.
