
Zabaglione
SERVES 4
Preparation 10 minutes
Cooking 10 minutes
6 egg yolks
110g caster sugar
125ml Marsala
grated zest of 1 lemon
to serve

cantuccini biscotti
Assemble the ingredients, as instructed opposite, and bring a saucepan about half to a quarter full of water to the boil on the hob.
Add all of the ingredients to a mixing bowl and place on top of the saucepan on the hob, but ensure it is not touching the water.
Whisk continuously for 12-15 minutes until the mixture has tripled in volume and is pale and full of air bubbles.
Now serve immediately if you want to use the zabaglione for a warm dessert.
For a cold dessert, allow to cool and fold in 150ml of lightly whipped cream.
