
Fresh broad bean and Pecorino salad

1.5kg fresh broad beans
250g hard Pecorino cheese, cut into small chunks
3 tbsp olive oil
freshly milled black pepper
Pod all the beans then blanch for 1 minute in boiling salted water. Drain well. Peel the outer skin off the beans carefully to make sure you don't damage the delicious interior, then transfer to a salad bowl. Add the cheese and oil, then mix together and season with plenty of black pepper. Arrange in a serving bowl and serve at once.
For the picnic, take the beans, blanched and peeled in one container, lightly dressed with a little olive oil. Take the Pecorino in a whole piece and cut it into chunks just before you need it. Combine all the ingredients about half an hour before you want to eat the salad.
