Lobster, cherry tomato and rocket salad

1 medium-sized lobster tail, sliced
100g cherry tomatoes
100g wild rocket
2 tbsp chopped basil
for the dressing
4 tbsp extra-virgin olive oil
1 tbsp balsamic vinegar
1 tsp wholegrain mustard
½ tsp sugar
squeeze of lemon
pinch of salt

Whisk the dressing together or pop in a jar with a firmly fitting lid and shake.
Wash the wild rocket and add to a salad bowl along with the chopped basil. Halve the cherry tomatoes, and scatter the lobster meat and tomatoes over the rocket.
Drizzle over the dressing and toss it all together.
