
Baked peaches stuffed with amaretti
SERVES 4
Preparation 10 minutes
Cooking 40 minutes
4 peaches, halved and de-stoned
200g amaretti biscuits, crushed
1 tbsp demerara sugar
1 tbsp flour
70g butter, softened
1 egg
Preheat the oven to 170ºC/Gas Mark 3. Butter a shallow baking dish and place the halved peaches in the dish. In a food processor, blitz the crushed amaretti, adding the sugar and flour. Add the softened butter and egg, and blitz again.
Add a dollop of the mixture to the inside of the peaches and haphazardly sprinkle with a little more.
Pop in the oven for around 35-40 minutes until the peaches are soft and the mixture is foamy and brown. Serve warm, preferably with a little crème fraîche.
