Tiramisu
SERVES 4-6
Preparation 25 minutes
Chilling 1 hour

500g mascarpone
200g sugar
seeds of 1 vanilla pod
3 egg yolks
200g fresh double cream
24 savoiardi biscuits
500ml coffee
2 tbsp cocoa powder

In a bowl, beat the mascarpone with the sugar and the seeds of the vanilla pod. Add 3 egg yolks and continue to beat for a few minutes until light.
In a separate bowl, whisk the cream. Add to the mascarpone mixture.
Soak the savoiardi in the coffee. Cover the bottom of a large dish with the soaked biscuits, then a layer of the mascarpone.
Continue to build layers in the dish alternating between the soaked biscuits and the mascarpone, ultimately ending with a layer of the mascarpone cream.
Sprinkle with a dusting of the sifted cocoa powder.
Place in the fridge for at least 1 hour before serving.
