Taleggio and pear tart

250g ready-made puff pastry
3 tbsp dry bread or cracker crumbs
3 ripe pears
250g Taleggio cheese
100ml fresh single cream
sea salt and freshly milled black pepper
a pinch of ground cinnamon

Preheat the oven to 190ºC/Gas Mark 5, then grease a 26cm tart case thoroughly.
Use the pastry to line the tart case and press the edges to the sides firmly with the back of a fork. Scatter the crumbs all over the base of the pastry.
Peel and slice the pears thinly and arrange them over the crumbs. Take the rind off the cheese and cut into small cubes.
Put the cheese and the cream in a bowl over a pan of simmering water. Stir until the cheese has melted completely, and then pour this over the pears. Sprinkle with salt and pepper and the cinnamon, and bake for about 30 minutes. Serve warm.
