Prawns in tomato sauce

1kg fresh, raw shell-on large prawns
5 tbsp olive oil
3 cloves garlic, chopped
250ml passata
sea salt and freshly milled black pepper
10 leaves fresh basil, torn into small pieces

Give the prawns a quick rinse in cold fresh water and then pat them dry. Heat the olive oil in a large, deep frying pan with the garlic. Fry for about 5 minutes, then add the passata and stir. Cover and simmer for about 5 minutes, then add the prawns and sprinkle generously with salt and pepper. Stir constantly, over a high heat for about 5 minutes, depending on how large the prawns are.
Cover with a lid and take off the heat. Leave to stand for about 3 minutes, then tip out onto a platter, sprinkle with the basil and serve immediately, or once cooled to room temperature.
